Chicken With Goat Cheese & Cherry Tomatoe - I hate to break my head when it comes time to think about dinner this week. By cons I like to surprise her with a dinner that looks elegant, warm but mostly simple.
And it is not because it is a weeknight we must limit ourselves to traditional Chinese blocks or macaroni with meat. I have nothing against the classics, they are delicious and practices cetainement but sometimes redundant.
The inspiration? Two chicken breasts and remaining white wine.
Chicken with goat cheese and cherry tomatoes (for two)
♥ 2 chicken breasts without skin or bones
♥ 1 toothpick goat cheese sliced
♥ 200g cherry tomatoes
♥ 2 c. tablespoon dried thyme
♥ ¼ cup water
♥ ½ cup white wine
♥ Olive
♥ Salt and pepper
♥ Toothpicks
Preheat oven to 350 ° F.
Using a knife, open the chicken breasts in the portfolio, taking care not to tear the flesh completely. Place the slices of goat cheese inside of each breast. Keep a few pieces of cheese to brown the breasts.
Close and secure with toothpicks. Salt and pepper.
In a pyrex dish, mix: tomatoes, 1 tsp. tablespoon of thyme, a drizzle of olive oil, salt and pepper .Place chicken breasts in the center. Cover with 1 c. chopped thyme, olive oil, white wine and water . Bake 30 to 40 minutes. Until the breasts are golden and tender.
Serve with a green vegetable and mashed root vegetables.
